ADDING QUALITY AND EXCELLENT "PEP" TO YOUR PEPPERONI STICKS & THICKER SAUSAGES...
So here's just about the very best of the spice line as they come. So easy to use, measure out for smaller amounts and the quality of the spices really makes that much of a huge difference in just ok finished product to EXCELLENT PERFECT product. No bitter or metallic aftertaste or that burp you get brought on by cheap spices that tear up your stomach and just kill your wanting to ever try again. Consistent spice quality makes your finished product the same when you find that perfect mix that sets your finished product superior from ALL the rest. Try it. Write down your recipe and follow it or fine tune it to return to that perfect flavor that's yours and yours alone. Using A.C. Legg spice will have you the rage of the cross and people will come back to your product because of an excellent quality taste. I hope you enjoy and for the price, you just can't go wrong. Not worth any chance of trying cheaper brands with their promises. A.C. Legg is an excellent name and superior quality product. Personally, I make 3 x 21 inch and 2 x 24 inch sausage. I smoke all mine for approximately 9 hours for 3 inch and 5 hours for 2 inch at 205°F consistently. No splits, no bulging and thoroughly cooked to the center. No burning, no failed casing. Perfect!!! Photos are the spice in package, actual spice, raw chicken breast, chicken with spice, spiced chicken breast in casings and final smoked and vacuum sealed 1 hour after smoker. Color is fantastic... taste is off the charts...

A little salty but great
I have high blood pressure and stay away from adding salt at table. All the legg products I have used are a great season blend but a little salty for me but may be fine for you. The taste is great on all the legg products if you follow the directions and weigh your meat when mixing!!.

Convenient package.
Convenient size. Easy to divide for smaller batches. Sealed fresh. Cure included. Not spicy enough for what I would consider a great pepperoni. Double the amounts and it would be a lot better.

Great Flavor
Great flavor. We used this spice mix for one of our sausage runs here on the farm and we were very impressed with the flavor of it. Follow the directions and you will have no problems. It is a pretty good value for the money and the product you get at the end is very worthy of charging money for. Their quality at this place has always been in the forefront of what they do, and we were very pleased and felt very reassured for what we were going to make. Sausage making isn't cheap if you want a quality product, and these guys make it really easy for you to make a great product.

Not as much flavor as expected
I used this seasoning to make 16 lbs of pork pepperoni in 2” casings to pass out to family and customers for Christmas. I ran the meat chunks through the grinder with the seasoning to get an even mix and slow smoked it up to 152 degrees. Hung them to bloom for 3 hours after the ice bath and refrigerated for 24 hours. Cut into the first log with my son and there was very little flavor compared to how much seasoning went into the batch. I will try to hang these in the fridge to dry out a little and see if the flavor increases
