When you have celiac disease and you're on a gluten-free diet the choices are limited. Have they gotten better over the past 20 years? Of course. But not everything is healthy when it comes to gluten-free options at least as far as mixes or pre-made items are concerned. This King Arthur gluten-free protein pancake mix is an exception! It is delicious, it is high protein which is rare in pancake mixes or sweet breakfast items. I usually make a whole batch at once and store the refrigerator or freezer and pull out a few here and there. I have upped the protein in these by using a protein milk which is great as well. My son likes them for a quick and easy breakfast on a school morning. We love it so much that I have subscribed and save on this item for a monthly delivery. 😁

This GF King Arthur protein pancake mix tastes great and is a good deal on Amazon! The only problem I experienced was that I ordered 2 bags and one of them was shipped with a plastic bag taped around it. The flour was leaking all over the bag. Upon closer inspection, i noticed there was a tear in the bag and they had shipped it knowing it was leaking, thus the plastic bag wrapped around the product bag itself. The other bag was fine. I tried to file for a replacement as I was not about to ingest a damaged food product, not knowing about the safety of it. Well there are no returns "due to it being a food item for safety!!" Luckily I was able to chat with an Amazon service representative and they did credit my account after I told them what happened. They recommended I donate it somewhere, but I told them I couldn't because you can't donate opened food items... I had to throw it out. I would love to order more, but am afraid in case this happens again....

Finding a quick and easy meal that's also gluten-free and reasonably healthy can be a challenge, so I was delighted to find this pancake mix! It's not marketed as plant-based, but is easily adapted for that by just using alternative milk and leaving out the eggs. It’s so simple to make, which is a real treat when you're used to spending more time on plant-based meals. The pancakes are both fluffy and tasty! It’s on the expensive side, but for the combination of taste, nutrition, and convenience, it's totally worth it.
