Can you use this for syrup?

I suppose it would work ok. It works for sugar, it's just smaller than I thought it would be. So it would probably hold and pour syrup for a couple of pancakes or waffles.

Would lighter sugar substitutes pour correctly from this dispenser.....Southey are so much lighter than real sugar

I use Splenda, and it pours some then stops, shake a little, it pours some and stops. Not what I totally wanted, but better than others. Note that it’s 5 inches tall.

Is the opening/spout large enough for raw sugar?

It should be. The regular granulated sugar comes out slowly, 'not all at once" or really fast like other dispensers. The flow never stops due to the opening being too small. This dispenser is one of my husbands favorites. I guess if it doesn't work you can always return it.
