Great knife
Really nice knife. It looks good and feels good in my hand. Very sharp right out of the box. I havenāt used it yet but Iām sure it will work well for butchering. Which is why I purchased it.

This knife is sharp and built very well. I fillet some whole flounder the other day this knife did real good. I am pleased with it quality and performance.

Super nice knife
Love the look and feel of this knife. It's super sharp and it's great for performing thin slices in a straight line. My only wish is that the blade was a little thinner to allow it to flex and bend while you're removing the skin of a fish on a cutting board. This is why I gave it 4 stars. If you don't want the knife to flex like I did, then it's definitely a five-star knife.

Extremely Sharp
Knife comes nicely packaged, so you can gift as is. Seems to be of good quality and has a decent weight to it. It is extremely SHARP. I keep it in the box in the kitchen drawer. Went to take it out of the box for these photos and dropped it and cut my finger. š So be extra careful when handling, not clumsy like me.

This is a great filet and deboning knife!
I bought this to actually use to skin and carver up deer. It can be used to carve any type of meat, like filleting fish, chicken, pork, lamb, vegetables, etc. I needed a flexible blade that stays sharp to take the silver off of deer meat but that could also cut tendon and be used to debone and even skin deer to remove the hide. It's been very affective, I may get another to have two. Sometimes getting at the inside and back loins is difficult. A couple is slits with this knife and the loins pull right out. I know not everyone is butchering deer, this is just an example. This is an elegant knife and very sharp. It has an ergonomic comfortable handle, stays sharp, and cleans up easily. The handle can become slick when bloody or fat soaked but is does not stain. Just wipe it off and keep going. Its flex blade really helps get the most meat. It even carves turkey very well. It is designed well and uses carbon steel. Don't put it in the dishwasher. Hand wash it, and then put some olive oil on a paper towel, lightly oil it, and it should never rust. It does not come with a sheath, but the box is thin and designed for the knife so I didn't bother. The price is right! If you need to replace it for any reason, it won't break your bank. I'm sold on it!

Exceptionally Sharp, Minor Color Variance - Still a Keeper.
This might be the sharpest knife Iāve ever owned. The Hoshanho fillet knife is sleek, lightweight, and incredibly precise. The contoured handle feels secure and comfortable - never slippery, even during delicate prep. Itās not bulky or heavy, just the right weight for confident control. Visually, the knife is striking, though the handle color is significantly darker than pictured on Amazon, and the grainline is less pronounced. I selected this knife to complement a piece missing from my main knife set, but the color mismatch is noticeable. Still, the performance outweighs the aesthetic gap, and Iāll be keeping it. Up close, the blade finish has a few quirksāsome markings near the thumb rest that look slightly unfinished, and a faint line about 1/32ā from the edge that resembles a peel-away layer. Both are smooth to the touch and donāt affect function, but theyāre worth noting for those who value visual perfection. Despite these minor details, this knife is a standout. Razor-sharp, comfortable, and highly recommended for anyone seeking precision in a fillet knife.
