Nice Knife, Very Sharp, Good Price
I use this to trim up briskets and it works great. Super sharp and holds an edge well. Blade has enough flexibility to get around obstacles without being limp. Could be used for filleting fish as well. Good price for the quality.

Terrific Knife!
I purchased one for trimming brisket and pork butts, but it is so much more versatile. It stays sharp longer than any other knife I have tried. Since that original purchase, I have purchased two for gifts and another for myself. Highly recommend!

Decent knife for the price and purpose
Definitely is not an award winning knife, but for the price it works great. Hopefully the blade will stay sharp for a while.

Works Amazing
I bought this boning knife because it was recommended by AMERICA'S TEST KITCHEN (cook's illustrated, cook's country etc.) I must say it does not disappoint. The blade on the knife is just stiff enough not to give when you dont want it too but flexible enough to bend into touch areas when boning meat. I felt the edge was a little dull upon receiving it but it has performed beautifully every time. I am glad I made this purchase as it was very inexpensive yet does the job as well as the very expensive ones. I am not used to the plastic Fibrox handle but it fits well in my hands (they tend to be on the medium small size) and they do provide and firm grip even when my hands are slippery. Great for removing the tough fat, grissle, and silver skin off of steaks and boning chicken breast off a whole bird or turkey. You wont regret this inexpensive purchase.

Best boning knife from a quality manufacturer
I have the chef knife which is excellent and rated highest by Americas Test Kitchen so I decided to buy the boning knife. It too works extremely well, is as sharp as a surgical scalpel, and very flexible.

Victorinox - what more is there to say. I was introduced to this brand 60 years ago when I served my butchers apprentice and they have never let me down. The knife holds an edge well, is reasonably easy to sharpen and, in the case of the boning knife, flexible enough to get the most out of a cut of meat.
