Japanese Quality Edge, German Quality Build
As a professional chef, global is a brand which I've seen and worked with hundreds of times. Their prestige in the professional kitchen is only matched by Wusthof, a German manufacturer. While advertised as a vegetable chopper, the GS-5 is quite handy and nimble for use as an all purpose knife, trimming meat, breaking down caracasses etc. although I wouldn't recommend using it to try and cut through small bones, as the edge is quite fine. Due to its finer edge, Sharpening this knife without whetstones would require something like globals own GS-440SS Ceramic Water sharpener, or the MinoSharp Plus 3. These products are set to the required degree for easy home sharpening. Excellence, with an entry cost
These blades really are as sharp as advertised. They cut cleanly without crushing or sawing. It takes less effort to produce a more precise result. The thing to bear in mind is, if you are buying or giving a first Japanese blade, that they require additional outlay for ceramic sharpeners: Shinkansen 'Water' Sharpener - Black and Red or Global Ceramic Medium Whetstone Orange - keep your knives sharp and in good condition or Global G-25: 24cm Ceramic Sharpening Steel

Excellent, if not the best knife ever.
I know these knives are pricey but they really are great. I find this vegetable knife to be the most useful (not only for veg.) and it feels good in the hand. They are razor sharp so treat them with respect. I am a bread maker so this knife is perfect for scoring the dough cleanly without drag.

Fantastic knife.
I love global knives, they make such a difference when preparing your food and make it so much more easier to cut! I got this one because we only had the larger knives which we also love and though this would be a nice addition to the kitchen which it was!

Goes through veg like vindaloo through a bowel
Well.. where do I start.. I didn’t have to actually unbox this knife, I just tilted it to the side and it sliced it’s way out of the packaging. First port of call was a lime, I had an ungarnished corona that couldn’t fit a whole lime in the neck..so what to do? I swiftly deployed this knife to solve my issues. The problem was that as I moved the knife from its block, it was so sharp that it cut through reality and I ended up with a rift in time and space in the middle of my kitchen. You’d think this would warrant a bit of a slating in this review, but it turns out that it was quite handy to have other means of transport through space-time during this fuel crisis. 10/10 would recommend.. the lime didn’t know what hit it.

Excellent knife
Global you just cannot beat the knife. I find this size is just right for all cooking from vegetables as well as meat. It is a little expensive but it will be the only knife you will need..

Just what I wanted
We have some Global knives but they were either too big or too small for vegetable preparation. This one is the prefect size and is razor sharp.

Way too fragile.
This was one of my favourite knifes - I liked the balance, the weight and, arguably the most important aspect, the way it cuts. Even simple things like cutting a spud or slicing a pepper were a joy with this blade. I also bought a few other Global knives on the strength of this one, which all look fantastic on my knife rack. However, I'm going to ruin the uniform look on my rack, as I won't be buying another, because - well, you could look at my image to tell you. I think if you're spending this much money on a knife, you'd expect some longevity, but they are too fragile. I dropped mine onto a wooden floor and it shattered. Complained to Global, and received a very quick standard reply, which suggested to me that they get this complaint a lot. In summary, it really is a joy to use, but I give it two stars as for this price, I would expect it to me more robust.

This knife is super sharp and is lightly weighted. The handle sits perfectly in my hand and is so good for many of my cutting and chopping tasks, ideally for almost all vegetables. A must have for my knife collection.
