Q: What is the point of the controller?

It's to configure and manage the UniFi APs and their users on premises. The alternative is Ubiquiti's Cloud Controller or running the software on a PC. The controller can be accessed remotely via Ubiquiti's Cloud Service.

Q: If i had this with the ubiquiti gateway and ap pro's, would i lose any functionality by just having an unmanaged switch rather than the ubiquiti one?

An unmanaged switch will ‘typically’ not allow vLANs to pass. Or at least strip any vLAN tag. For the non technical, this means you are limited to a simple flat network and you may struggle to put in a Guest network (which typically uses vLANs). This vLAN feature will also allow you to set sensible max up/down data rate limits for UniFi AP guests from within the UniFi controller. So, suggests you get a UniFi switch if this appeals.

Q: How do you setup configure this cloud key?

If you use a phone download (unifi network) ap works all phones also need to register with ubiquiti. Using a pc use ip address of the cloud key you also down application for Windows 10 in the windows 10 store. Hi, Unifi Cloud Key - UC-CK replaces a computer with Unifi Controller installed in networks where there is no possibility for the controller to work constantly. However, it is not required for the network to work so that the Unifi Controller works constantly in the background, but without it will not work functions such as: - Guest Policy = Traffic shaping, client isolation via restricted subnets and Guest Portal (if enabled) - Guest Portal = The captive portal / landing page So generally the Unifi Controller application after setting the settings and saving them on the devices is not required and can be closed on the computer and the Unifi Cloud Key is not needed for basic network functions to work.
