Fleur de Sel de Camargue is the best of the best salt crystals. You can use this crystals for fish, candy, etc. Camargue is a region South of France, and the best salt is derivative of this specific area. You will also enjoy the crystal salt from the north of France, Brittany. You will not be disappointed. KIKI

Q: Can I drop my table salt and use this instead as my everyday salt ?

Well, you could, but it probably wouldn't work in a standard salt shaker. I use it like table salt, but just take a small pinch in my fingers. So not super convenient. Great salt though--give it a try!

Q: any anti caking agents or bleaches used?

I don't know. It is suppose to be flakes of sea salt. My experience is that it is fairly light white in color - no greys or marbling, and this color is consistent throughout the product. Does that mean they use bleach? I really can't say. Again from my experience it is best to keep this product dry; damp fingers will cause it to clump. Otherwise it stays in pretty uniform flakes. Does that mean they use an anti caking agent? I don't know. Please understand the nature and use of this salt. It is a finishing salt to be sprinkled lightly on top of the cooked food - like a dusting over fish or eggs. Use table salt or Kosher salt for incorporating within the dish. This is a special salt to be used sparingly as a choice flavor enhancer. Really a pinch is all you need. I love this salt and use it when appropriate. Hope my experience gives you some direction.

Q: Is the canister a tin or cardboard?

Cardboard. It keeps the flakes dry. I think a tin would cause dampness.
