I don’t enjoy the smell of the product in the dough, but bear with it and the resulting noodles are very good and distinctively smell like the ones from legit ramen places. The dough became more pliable and a joy to work with, and after a few batches, I often end up using just half of the suggested amount so the smell doesn’t make me sick. If you like your noodles al dente, you’ll enjoy the bouncy texture the product brings to the cooked noodles.

It's nice to finally have kansui I can buy! I got tired of doing the baked baking soda thing and I was never sure if I was doing it right anyway. The 6oz was a good size to start, and I'll probably try the other types (I tried Type 1) to see if it makes a differences as well. Packaging is pretty cool, love the art!
