I have bought three of these knives now, the very first one we got was perfect out of the box and almost two years later still quite sharp. Decided to buy another two (one as a gift) and both have been a disappointment and came out blunt out of the box. Did not live up to first one we bought.

Knife is very well balanced and very ergonomic. Blade came well sharpened and is fantastic to use. Purchased the knife after combing through many reviews saying it was one of the best economical all around professional knives on the market. Also purchased a whetstone but under normal use should not expect to sharpen the blade more than once to twice a year.

6 month review One of my passions is cooking, I have owned and managed several restaurants over the last 20 years never did I think I could or would use a knife in this price range. With that being said one of my employees mentioned they used Misen knives at home and was surprised by the quality. I went to their website and scoured the web for real reviews (if I could find a knife at this price point that actually was as good as the reviews I was willing to put in the time to research). I ultimately ended up buying the entire set on Amazon due to the easy return policy and of course the 2% back). Here's my impressions from day one to almost 7 months. Day 1 arrival and unboxing - All the knives arrived in premium packaging. I washed and sanitized them all preparing to use them for dinner. The knives themselves wereuch lighter than I expected and felt perfect in the hand. The material the handles are made of felt perfect . I would compare it to a ceramic with a matte textured finish. Blades were shard as they should be and ready to quarter some Cornish hens. All of the blades cut just as well as my much more expensive set. Vegetables diced perfectly. One of my favorite features about these knives it the angle at which the blades are forged. For instance the chef knife angle is different than the paring knife angle allowing each knife to perform individually perfect at the task it's supposed to do. One month in and all the blades are still Sharp. Edges are clean and no honing or sharpening needed. Although I don't use every knife every day I do use at least one or two of the set daily. 3 months in and knives are still holding an edge and I decided not to sharpen them to see exactly how long I could go before needing to sharpen them. This gives me a good idea of the quality of the steel used to make these knives 6 months in and all of the knives still have an edge but starting to dull. I sharpened the entire set and they were like new. I specifically used an inexpensive wet Stone to sharpen these knives instead of a honing tool so that way I could see if the average user would be able to sharpen easily. 7 months since I first received this set and I'm happy to say it is now on my countertop for use as my daily knife. Since then I have ordered several different Misen products and hope they all are as good as this knife set. I'll continue to update this review . Bottom line is the quality versus value of this set is unbeatable. I purchased two more sets as gifts. You can't go wrong

This knife is perfect. It was extremely sharp out-of-the-box, and the perfect weight for chopping. For some, an 8 inch Chef's knife may feel unwieldy, as it was for me at one time. I used to use a 5 inch Chef's knife, but once I got used to the 8 inch, I wouldn't go back to the 5 inch for most of what I use a Chef's knife for. I use this knife more than once daily for cutting potatoes, tomatoes, and for chopping herbs like parsley. For many knives, cutting tomatoes is a problem as they tend to squish if the blade isn't sharp enough. This knife cuts through them using practically no pressure so they don't squish. You can consistently cut perfect paper thin slices of tomatoes without squishing the tomato using this knife. One of my favorite uses for this knife is to chop herbs, such as parsley. Simply put a couple fingers on the end of the knife, lift the handle so the blade is over the herbs, and let the weight of the knife do the work. Chopping onions, garlic, parsley and more takes a matter of a couple of minutes. Although I have a couple of machines for chopping, I generally don't use them since I can chop more quickly with this knife and not have to clean the container for the chopping machines. Using this knife takes less time with much less cleanup. Since this knife has the Asian blade of 15 degrees, I expect the blade will need to be sharpened more often than the Euro blade of 20 degrees. Since the blade is made from a high carbon AUS10 steel, it should hold the sharpness for longer than blades of a lesser steel. Comparing this knife to some of the high end knives I have, such as Shun, Wustoff, etc., this knife is every bit as good at a much more reasonable price. I do recommend this knife, and hope this review was helpful for you. I will definitely update this review if my opinion changes.
