Awesome Cooking!
I have owned several of the "cheap" versions of the La Caja China. After two of those that I ultimately ended up tossing out, I decided it was high time to go ... high-end. They are awesome. Do not take my tossing the cheaper versions out as they aren't good—they are GREAT. But when you cook as many pigs as I have in these, they have a lifespan. I have ONE and only real complaint above the design. The S hooks designed to hold they two pig brackets together have never worked well for the size of pigs I cook so I just pick up baling wire and tie them together with that.

An easy tool to use for great tasting food!
The very first time I used La Caja China I had great results. The directions are clear, the method is simple, the results fantastic - especially the chicharrones. We all marveled just how easy it was to produce great tasting lechón. Many thanks for a great product at a reasonable price!
