It doesn't really caramelize and in high concentration liquids it can precipitate out as they cool, forming an unappealing, gritty crust on the bottom of stuff like custards, caramel sauces and pecan pies. It also causes a cooling effect that is undesirable in certain things. For these recipes I have switched to allulose. Allulose stays in suspension, carmelizes and browns just like white sugar. It is not as sweet as white sugar or sweeteners that are supposed to measure like sugar, but it is the same sweetness as straight erythritol so you can generally substitute it 1:1 if the recipe calls for straight erythritol instead of Lakanto or Swerve. Otherwise you will have to play around with the amounts or use a more concentrated sweetener like liquid stevia or sucralose in addition to the allulose to bump up the sweetness. Since it is so expensive I save the allulose for recipes where it's sugar-like properties actually make a difference.

Excellent sugar replacement!
Love that it is so similar to sugar (except for the INSANELY high price), with NO cooling effect like Erythritol! I use in coffee and baking. If your on Keto or on a no/low sugar diet you should be used to things not being as sweet. Allulose is not as sweet as sugar and isn't meant be be consumed in large doses. It's also not as concentrated as say Stevia. Those complaints saying it causes gastric issues...notice that the things your using it in are DAIRY products, try illuminating lactose then try using this product again (coffee, a teaspoon or two of Allulose with Lactose Free half & half) It took me a while to realize I was consuming way too much dairy, after severely cutting back for a couple months I can now tolerate dairy better but not in excess. Remember all things in moderation (portion control!)

Allulose is finally affordable
It tastes so much closer to real sugar than any of the other sweeteners. Yes you have to use a little more than you would regular sugar but when blended with other sweeteners it's perfect. Very happy with this product in particular. It dissolves quickly in liquid, even when cold. It has a nice fluffy bulk to it so baking with it is lovely. All of the above is assuming that the product is actually what it says it is. I have not checked my ketone or insulin levels after using this. I don't REALLY know if this is effecting me negatively, but.... well at least I'm not getting terrible GI upset like with erythritol.

No blood sugar spike, great taste!
This is the best sweetener to date that I have tried. It does not cause a blood glucose spike and there is no aftertaste at all. It browns just like sugar. It bakes up and makes the best caramel sauce ever! it is super awesome that it is gluten free! I recommend this to anyone trying to cut out sugar and want a better alternative. I used it in my gluten free sugar free birthday cake and nobody believed it was sugar free.

My new go-to sweetener
I've been trying a bunch of non-nutritive sweeteners lately. This one is my favorite. It doesn't give me that gross aftertaste in the back of my throat like a lot of other sweeteners do. It's also technically a natural actual sugar, and behaves like one; more specifically, it caramelizes like real sugar, making it good for baking and cooking.

I have found my sugar alternative
I have recently been told I am diabetic and have tried every sugar alternative on the market. This is the only one that doesn’t have a funny aftertaste and doesn’t sit in my stomach with an annoying reminder that I ate it. It is not as sweet as sugar, so you will need a little more. As far as the taste, it is the closest to sugar I have found. I made ice cream with it and my kids and husband thought it was regular sugar. It is pricey, but you won’t be disappointed you bought it.
