Excellent sharpener
Love love love. I've had this sharpener for a few years now and it still works great. I just recently purchased it for my sister in law as a gift for her bday. I haven't used this on serrated knives. I don't have fancy knives, just a Farberware set, but it makes them super sharp to easily butcher down meat and slice through tomatoes without smushing them. Super easy to use, I run them through the first side two or three times, then the second side two or three times. Highly recommend.

Quick and easy to use
I cook almost every day, so my knives see a lot of use and tend to get dull fast. I was getting really frustrated with my old manual sharpener—it felt like I was doing more harm than good, and over time my knives were just getting worse instead of better. This sharpener was such a game changer. It’s quick, super easy to use, and I could tell right away it was actually restoring the edge instead of just scraping the blade. I love that it combines electric and manual stages, so you get a solid sharpening without going overboard or damaging the knife. It’s gentle but effective, and my knives have stayed in pristine condition since I started using it. Even my serrated knives came back to life, which I didn’t expect. It’s not loud, doesn’t take up too much counter space, and honestly saves me so much time and hassle. Definitely one of those tools I didn’t know I needed this much.

Absolutely fits the bill to a tee, excellent price / performance - fantastic product!
I am an avid home cook and knife collector, and I've been on a quest for the ideal way to sharpen up my kitchen knives for quite some time now, experimenting with various manual sharpeners, honing steels, Japanese waterstones, and the like. I finally decided that this particular Chef's Choice 220 had the best price-to-performance ratio of the models listed, and for the price, I really couldn't go wrong. The unit is fairly small and compact, and stows away nicely when not in use. I brought out a few of my cheaper knives to test the machine out with, as I've read about some electric sharpeners not doing such a great job, and some even leaving very visible scratch marks on the sides of the knives when they are done. I turned on the unit and was further pleased to hear that it only generated a quiet hum, as opposed to reports of other louder grinding machines. I first tried to sharpen a very inexpensive santoku knife about 10 times through each side of the two 20-degree angled sharpening slots. The grinding sound is perfectly acceptable - in fact, much less noisy than even my coffee grinder. I then proceeded to do 20 back-and-forth passes through the manual sharpener to the side. As a first test, I ran my finger along the blade edge to feel for any nicks and burrs, and surprisingly I managed to cut myself - twice! This machine does some serious sharpening in a very short amount of time! I then proceeded to do the "paper test", and the "tomato test". My cheap Oster kitchen knife performed incredibly, carving up thin ribbons of paper like a samurai sword, and producing fine, translucent slices of tomato with great ease. After sharpening it at an even finer angle (there is some degree of mobility in each slot, to accommodate different sizes of knives), I was able to do the "palm shavings test" (which I don't recommend, but anyway), where there was a very fine dust coming off my palms when rubbed on them at a tight angle, like a razor blade. Do this very carefully! The only drawbacks I can see to this unit are that it only sharpens to the Western standard 20 degree blade angle, and it will not sharpen Japanese deba style knives or other specialty knives. Chef's Choice does make higher end models that sharpen those. For the price, I don't see this as much of a disadvantage. In short, I am incredibly pleased with the results that this little machine produced with such little effort, compared to the great lengths of time I've spent with manual methods. Highly recommended for home cooks as well as professional chefs!

Works Well For Me
Bought a pretty good chef's knife, an 8" Victorinox, maybe not top of the line but still a pretty nice knife. Came nice and sharp but wasn't going to stay sharp forever... so I bought the Chef's Choice 220. Keeps the Victorinox, with a thin gauged blade, nice and sharp. It works. And it's easy, left slot, right slot 4 or 5 times and then back and forth manually in the slot on the far right. It's put an edge back on my cheapo older knives too, but not like the Victorinox. Have some 30+ year old Hampton Forge knives, very inexpensive, made in China (under $20 for the set back then). The blades are a thicker gauge and in some cases have to be pushed down in the slots. I really like the 8" chef's knife, yeah cheapo but full tang blade, 3 riveted handle, nice feel and weight. Got an edge back on that knife (dull for years) but I doubt it will ever be as sharp as the new Victorinox. Still I can use it now, might be cheap but I like that knife. Also put a better edge on my cheapo Farberware bread knife, works for serrated too. I have a 6" Henckels chef's knife ordered, maybe I'll get to do a little name-dropping on knives for a change. I'm confident this chef's choice 220 will keep the Henckels sharp too. I actually give it a 4.5, but that's good enough for a 5.

For kitchen only
This is a nice little kitchen knife sharpener. It is not for many pocket knives or other utility knives…for kitchen only. My rating is based on having a sharpener that has more versatility and can be used for multiple activities. That said for the price this is not a bad buy. It is light ergonomic and works well. I would recommend it for kitchen use only. Thanks for your time. Best of luck.//Chuck

What an absolute pleasure it is to work with knives which are always sharp. I kept buying new knives when what I really needed was a knife sharpener! I wish I had purchased this years ago. No problems. Works like you think it should.

It's not cheap - but by golly does it work! Very, very effective bit of kit which has dealt with a badly damaged blade and returned it to service, and nicely sharpened my expensive kitchen knives. It takes a little practise - and go canny with it because it's capable of removing a lot of metal if you want to. The hone function is excellent - in fact, if the sharpener you buy doesn't have one, it;s not worth having. All the grinding wheel does is profile the blade, and you need to hone it after grinding. This one works very well. Downside? Well, the grinding process does leave a slightly rougher finish than I was hoping for - that said, once sharpened and honed, my big cooks knife really did pass the "tomato test" and slipped smoothly through a nice ripe one easily.

Este afilador hace milagros. Mis cuchillos son buenos, pero ya no cortaban para nada. Tenian anyos de uso sin ser muy bien cuidados. Despues de afilarlos con esto cortan de maravilla -- como nuevos. Esto si -- que tenia que pasar bastante mas tiempo en el primer paso de lo que ponia el manual. Y la maquina, al usarse demasiado, se sobrecalienta y se apaga. Pero dentro de poquito se vuelve a encender. Recomiendo este producto.
