So there have been some negative reviews about this product. I pitched this yeast at 95 degrees as per the the instructions. Started good but stopped prematurely. After a little research it likes warm temperatures to work best. Set it outside and the ferment went perfect. It’s a good product

As a veteran homebrewer, I've dabbled in a myriad of yeasts and techniques over the years. However, my journey took a remarkable turn when I discovered Red Star 9804 Dady Distillers Active Dry Yeast, particularly in the crafting of my signature blueberry wine. Mastering the Art of Brewing My adventure began with a 6-gallon barrel as my canvas. To this, I added 2 kilograms of succulent blueberries, 4 kilograms of granulated sugar, 6 grams of diamonium phosphate, and the star of the show—12 grams of Red Star 9804 Dady yeast. The initial phase of fermentation was conducted in an unsealed environment for 48 hours, followed by a more controlled 28-day fermentation period under an airlock. The Clarification Stage Post-fermentation, I employed a siphoning technique to separate the liquid from the sediment, allowing it to further settle for an additional 28 days. Following this, I introduced a clearing agent, as recommended, and patiently waited for another 5 days. The Revelation Upon the completion of the clearing stage, I utilized a refractometer to gauge the alcohol content. To my sheer delight, it had skyrocketed to an astounding 21.3% ABV. The Nuances of Aging While the wine was already transparent and palatable, I chose to take it a step further. I transferred the liquid into a third, pristine carboy for an extended maturation period of 6 months. While this wine is enjoyable as early as 6 weeks, the added aging time allowed the antioxidants, aromatic compounds, and natural flavors of the blueberries to fully permeate the wine, enhancing its complexity. The Culminating Judgment The final product was nothing short of extraordinary—a blueberry wine so opulent and full-bodied that it could easily stand toe-to-toe with any premium commercial wine. 4.5 Gallon wash w/18lbs (8kg) sugar, yeast nutrients, and 2 tablespoons of tomato paste (and not my first batch, though first with this yeast). After 3 weeks, and very sick of the slow work of this yeast, I decided to distill a batch in my 93% still. I got 1.4L out of the 17L wash...not even 10% after 3 weeks. I can hit better numbers with bread yeast. Far better and faster with wine yeast. To say I am disappointed, after expending resources to individually package and vacuum the contents into batch sized portions, would be an understatement. If what I received is indicative of the quality of this yeast I would say save your money. If not, then the quality of the quality control needs marked improvement, for what I received would not even compete against whatever your local grocery store carries in the baking section.
