whats the maximum depth you can cut? is it purely dependant on the length of the router bit?

Basically yes. The universal base only adds the same amount of depth as your router’s own base (straight swap) therefore the max depth is only based on your chosen bit. You can get collet extensions for different shank diameters, but remember when working at the extremes the stability of the bit reduces. Another option is to cut a circle to a depth of 8-10mm and then use a flush trim bit for the remaining depth.
