Should you put it in the fridge after opening to preserve it longer?

Hello, typically, you don't want to store olive oil in the refrigerator as it will solidify or get cloudy. It shouldn't go bad unless you don't use it in a short period of time. I go through a bottle of this every two months so no worries about it going rancid. Like all oils, it is subject to going bad after a period of time. I think for olive oils you want to consume within 6 months to a year. Unopened oils might last as long as two years. You might do some research on that. That said, this is a delicious oil; I find it tends to be high in polyphenols which can give a a "hot" feel (like with pepper). I mix it with butter and put on my popcorn. A guest once asked me "what's in this that makes it hot?". It was the olive oil! Anyhow, it's delicious and always a staple in kitchen.

Love at first sight, and taste. It's from a certain part of Italy, is organic and packed right where it's grown. Dr. Berg recommends this one after all his research. It's expensive and most people aren't aware of it. I think it makes a great gift for people who enjoy cooking as they're always surprised and pleased and it's high quality so I have no problems giving it as a gift. I've re-purchased several bottles.
