Nice functional tool that does what it's supposed to do...
Rather than making a widening split in your onions like an ax edge, this blade is intentionally designed to be thinner with a longer edge cut -- to slice their way through your veggies like a ninja, not a lumberjack. The dimples in the sides are there to "help" whatever you are slicing to not stick to the knife as much. Those are air pockets. Potatoes are starchy and sticky to start with, though, so that's a tough one. I find it does help some but not a magical total release of any onion, zuke slice, etc. BUT.... it DOES help! I find this knife a tremendous value using GOOD steel, for it's intended use. (LOVE the big Oaksware 7" CLEVER knife for ribs to make St Louis from Spare ribs and after cooking, sectioning chickens, etc and impressively heavy and well designed --- AND a real "value" at it's cost. VALUES are rare today. The feel, heft and balance of these is better than more expensive knives I mention elsewhere here. They LOOK great! The web site and the instructions that come with this knife TELL YOU TO NOT DISHWASH !! The heat can harm the TEMPER of many steels and take away it's ability to retain it's designed molecular structure for hardness, edge retention and durability. These are fine tools that HAPPEN to also be a value. Treat them as such. Hand wash, and dry. Cooking is one of my hobbies and I have some very expensive knives with this same steel, and I see no difference. One reviewer noted rust BUT he dishwashed them, did not hand dry - which you should NOT do with quality steel - as it can change the temper of the steel itself. READ the material they sent you for this knife! I appreciate the heft, full tang, balance, grip and appearance of this entire line and they are on a magnet bar from the big freight stores - mounted to the exterior of my cabinet door, right above my work space. The bar is angled down to fit the door, and the short knives mounted near the bottom lowest point of the magnet bar, allowing for the 10 - 12 inch knives at the tall end. Looks nice too. Not for homes with kids or animals who could get up there. When I do eventually need to sharpen this Oakware line (I have 4 of them) I have an electric kitchen tool that may still be available on Amazon by Wen. Opposing diamond rotating stones inside. WORTH every penny and about a $100. Masters tool. I have another identical machine with the name Fire Stone on it. They come in black and white with a single slot down the middle, front to back, on/off. I do not use a butchers steel for anything.

Great bargain, great knife, a little too big though.
Just got this. Incredible knife, razor sharp, professional quality. Good German steel from Essen Germany too. It is a major bargain compared to other knives out there. I used it to slice my tomatoes for breakfast this morning, it can make transparent slices. I love the balance and the steel bolster with fingerguard. Easy clean up too, just some soapy warm water and a quick dry with a dishtowel. DO NOT PUT IN DISHWASHER!! Dishwashers and good knives do not mix. Just wish it was 2 inches smaller, I really want a good 5" Santoku.

Look out! I might be a sushi chef yet! LOL!
I love this knife. It's very solid for cutting hard veggies and the slices slide off easier because of the built in ridges. Love that chop chop feel of the handle. Best knife I have!
