Will this netting frustrate deer from eating saplings?

Humm - possibly. I would be concerned that in a matter of days/weeks the saplings would intertwine with this netting making it difficult to extract without pulling out the plant. However if you used a support system and “tent“ the netting above the sappling I think it would work fine. You might consider a heavier “dear fencing“ netting material which is not quite so fine and easier to work with.

can you use this netting to catch a bat?

Yes, I used it to catch sparrows, I would not handle a bat without proper PPE and training as they can carry rabies and they may be protected as they are beneficial.
