Does this work with the new Fios Quantum Gateway?

yes. it will work with fios quantum. this device is moca compliant( actually this device is moca 1.1). you wont have any problem connecting to quantum router with moca 2.0 or 2.5, but i have to address though if youre subscribe to higher internet connection speed (200Mbps -1Gbps) and you deploy this device in a room where you connect your pc/streaming device/mobile/nas, you wont reach your subscribe speed due to this adapter is only moca 1.1. it can only reach 174Mbps max. Even your quantum router is moca 2.5, this device will become the bottleneck from getting your max subscribe speed, so it might be better getting moca adapter that are moca 2.0 and up. those devices can reach 1Gbps speed and it wont affect your wan speed and lan speed.

Will this work with an arris tg1682g on xfinity?

Yes, it does. However, be sure to disable the Link Privacy (or whatever that option is for Privacy). I don't think MoCA 1.x supports link privacy (this device is MoCA 1.x) and there is no way to setup the password for LP on the WCB3000N itself (it's grayed out). 
Other than, it should really be Plug and Play.

One word of advise, if you want to use the same Wireless SSID (WiFi name) as the primary Arris TG1682, then press the WPS on the WCB3000N and then press the WPS button (on top) of the Arris within 2minutes. This should auto-setup the MoCA device with same SSID.

Does this still work with Xfinity routers?

So, far this works pretty well for me.  We have xfinity gigabit internet.  When connected directly to the ethernet port, I get about 150 megabits.  The wireless is about 65 megabits.

Can more than one wcb3000n be connected to a vz fios router, or is one extender the limit?

I work for verizon you can have up to 4 extenders on the account, 10 stbs (with moca connection), 1 router and the ont. That's 16 devices the limit for a home moca network.
