Legit Pancake Mix, 2 Pack

Really good mix and makes great grain free pancakes if you use the whole package (makes a lot!). My kids couldn’t tell the difference from wheat flour pancakes. However the number of servings listed isn’t correct. I tried to make half of the package the first time; it says there are 10 1/3 cup servings. I measured 5 1/3 cups to be precise. It was far more than half the package, so that batch the batter was too thick. When I used the second half the next week it was wayyy too thin. I don’t really want to pour it out and figure out the exact measurement so I’m still trying to perfect the half bag recipe. Regardless I still really like this mix.

This absolutely, with out a doubt, the most amazing pancake mix I have EVER had. I searched my whole life for a product that tasted like grandma's homemade pancakes. THIS IS IT!!!!!I like to add berries to the mix before cooking.The amount of pancakes it makes is about 12-14 maybe more regular size pancakes.I like to make mine pan size and thick. This allows me to cut them for freezing. One package could easily last me a month or more depending on how I prepare it.I am excited about this new packaging!!! What a pleasant surprise.Recently I had foot surgery and can not walk for 3 months. So, I've been doing the grain/dairy/nut free thing since about 2011. I've made replacement recipes for brownies, cakes, cookies, biscuits, waffles, you name it. The one allergen free recipe I missed so much was pancakes, and good gluten and dairy free pancakes always eluded me! So many weekends spent trying various mixes and recipes-I've had gummy pancakes, crumbly pancakes, pancakes where the predominant taste was baking soda, and pancakes made from flours that broke out my skin and upset my stomach. UNTIL NOW. I made Legit pancakes this morning for my family and a friend who was here, and everybody agreed that they were the best pancakes I have made since removing flour and milk from our diets six years ago. I'm in LOVE. These pancakes are easy and cook up fluffy-perfect. Thank you, thank you!

Finally, a grain-free and dairy-free pancake mix that doesn't have tons of questionable ingredients. Waffles were the only thing I really missed since switching to a paleo diet a year ago, so I was thrilled when I found this product. I tried it for both pancakes and waffles, and it works great. I like this mix because the batter is not too thin but also not too thick. They taste just like the whole wheat waffles and pancakes I used to make pre-paleo (although I add some ground cinnamon to the batter for personal preference).

Absolutely delicious and easy to make! I used about 1/3 of the package that probably yielded 12-13 pancakes. I didn't count as I was making and eating at the same time. I have tried a lot of gluten free/dairy free recipes and the texture always throws me off. But not these! They are fluffy and delicious, with few friendly ingredients that will probably be very well tolerated by most people.Pros: fluffy texture, easy to follow instructions, great packaging, healthy, quality ingredients, allergy friendly.Cons: you might eat too many.

I love this mix. So nice to throw all the mix and a few other ingredients together and it's ready to go. My favorite way to enjoy them is as waffles.

I love Legit Bread Mix. It’s amazing. But I should have read the ingredient list before ordering this pancake mix. Literally it’s just cassava flour, coconut sugar and baking soda. I could have made that myself considering I have a giant bag of cassava flour that I use for tortillas and brownies. Because let’s be honest here, Cassava flour alone does not render the best results for most baked goods and especially not for pancakes. These look fluffy and soft but they are actually kind of gummy inside and the combination of cassava and coconut sugar gives it this awful taste. My kids hated them. I seriously thought this mix had some other ingredients that would make the pancakes taste like the real thing since she accomplished that with the bread mix. But that wasn’t the case. I love what she stands for and I love her bread mix and I really hope she will change this pancake mix recipe to something better because I know she can! And when she does I will religiously buy it.

I love the convenience and taste of these. We are more grain free and not really paleo due to celiac. We add a bit of powdered sugar and chocolate chips and make delicious waffles. Really great even without those add ins.
