Will this fit a head that measures 6 7/8?

I could not tell you it would fit a head that is 6 7/8' for sure but I am guessing that size head would be a child approximately 5 to 6 years old. I can tell you for certain though that I bought three of these for my grandsonsons who are 6, 4, and 3 years old and they fit perfectly. I might add also they are adjustable as well but never had to make any adjustments. I would highly recommend these helmets

I bought three of these for a 3, 4, and 6 year old. It's a little big for the 3 year old, but good fit for the other two boys. I would say it may a little small for a 12 year old though. Hope this is helpful to you.

Can the cage be removed in order to use the helmet only?

Yes, a couple of screws removed and the cage comes off.
