What kind of steel are these made from? What's the HRC rating and how were they tempered?

They've said in other comments that it's 420J2 steel hardened to about 53 Rockwell. 420J2 is about the lowest grade steel there is for making knives with a low carbon content but it's cheap, corrosion resistant and since 53 is about as hard as the steel will get it's not likely to break. However it will never take let alone hold anything better than a mediocre edge tops. 420J2 is what the $3 flea market knives are made from, because it's cheap and stainless.

Kamikoto is a brand of a marketing company (Galton Voysey) in Hong Kong, who sell products made in China under foreign sounding names. With the power of marketing, they make people believe that they are getting products from anywhere other than china.

As for the actual knives themselves, long story short, they are not good, not an upgrade from whatever you are using now. Not because they come out of China, but because they are essentially not any different than what you would find in your local supermarket. Kamikoto knives are made from a type of steel that is very stainless, but very soft, too soft. It's the same stuff you would use for your forks and spoons.

Are these knives dishwasher safe?

Hello Bobby - The Kanpeki knives are dishwasher safe, however, it is recommended to was the knives by hand. Washing any knife in the dishwasher will result in the blade becoming dull much more quickly. The blades can also become damaged in the dishwasher if they come in contact with any other object resulting in nicks on the blade.

How do you keep the knives sharp?

These knives are very sharp and do not require much maintenance and if needed i use the kamikoto whet stone excellant sharpening stone.
