Can I use these with cat5e solid wire cable?

I use them with solid wire only, cat5 & cat6

Will these connectors work with size 23awg cat6 wire??

Are these rj45 or 8p8c connectors? the ones i received say cat6 but are straight across instead of staggered.

Whether it comes in straight-across or staggered pin arrangement does not matter and can't be considered as a way to differentiate between Cat5 or Cat6. The staggered arrangement is just for thicker gauge cable where all the wires wouldn’t fit properly side by side, thus the need to stagger the wires.
