Can the 4x8 be expanded to just 4x4 or other sizes smaller than 4x8?

No it can't. The 4x8 must be fully expanded as designed. Only when fully expanded can the Centipede support very heavy workloads.

Is this sturdy/stable enough for a CNC machine that vibrates a lot?

It will support 3000 lbs. The vibration could be a problem unless you top the centipede with a sheet of foam insulation and then a sheet of plywood. It comes with holfasts that do a respectable job that you would use to hold the foam and plywood in place. I believe I could make it work for that purpose, but since I don’t have personal experience with your particular machine I could not say for sure.

Has anyone used this with their track saw?

I did. And I should of adjusted the saw blade depth cause I nicked the plastic holders but you live and you learn. Worked very good by the way. That's the reason I bought it

If you require a strong, and portable assembly table, this is it. It sets up in a matter of seconds. I use 4, 2' x 4' x 3/4" pieces of plywood as a top. I used 3 joinery biscuits glued into one edge of 3 of the plywood pieces to hold them together. I can disassemble the whole thing and put it away in about 2 minutes.
