Will it fit with the heatsinks that come with m.2 nvme's aswell?

No it wont. It comes with its own thermal pads and its quite snug. You can fit only the nvme chip, nothing else..

can I connect 2 of this to my gaming PC and make raid 0 ?

Wouldn't be worth it. Just get 2 ssds and hook them up and run in raid.
