How is the compost separated from the worms? This has always been a problem for me because I always seem to have lots of worms left in the compost.

It’s really not. There will always be some worms in the “finished” castings. You can bait them by addressing my food to a higher tray and waiting a week or so, but there will always be some worms in the lower trays.

I kept worms outside year-round in Oklahoma in a regular compost-pile built on the ground—not in a manufactured bin of any sort. My worms were active all year. The secret is to keep it going just hot enough in the winter (by adding plenty of “green stuff” to heat the compost a bit). As long as you’re also leaving the worms somewhere they can hang out, near the surface, where they can escape that heat. So, for example, in this bin, “hot compost” in one corner, while adding plenty of (“brown stuff”) bedding across the rest of the bin. A heat lamp near it would work to get them through a cold snap, if necessary. Just pay attention to temperatures inside the bin so the whole thing doesn’t get too hot or too cold.
