Is it big enough to hold a passport?

Can it hold a passport? The outer dimensions are 4" diameter, and 5-1/2" length. The interior dimensions are 3.25" diameter and 3.75" height. A passport is 3.50" wide by 5.0" tall. It CANNOT hold a passport. (Unless you fold it in half and damage the passport).

If someone were to open the top - what would they see?

if someone was to open the top They would see an unopen (sealed) can of coffee, it even sounds like a a usable can when shaking it.

Can you remove the foil top underneath the yellow plastic lid to add more coffee, or is this not a good idea?

probably not a good idea. I made a real regular size coffee can into a safe by adding a plastic platform (smaller lid) about 1/3 down, then put coffee on top. works ok, but had to add weight under fake lid to feel 'real'
