The AUS10 steel Regalia Boning / Fillet Knife is a very good looking and well built piece with substantial weight, nice finish on the blade and easy to grip, large and impressive handle. As delivered the knife required sharpening for best results. Sam at Rutledge Brands responded immediately and proactively to my concerns about this - it's clear that this supplier actually cares about customer satisfaction and the quality of their product.Now sharpened to a nice edge, I've found the substantial handle (I have larger hands), continuous curve of the blade and tapered profile makes it very effective in working with chicken and beef for trimming, slicing and making thin cutlets from whole chicken breasts.Things to know:1. It's a strong, handle heavy knife with quite a bit of overall heft and stiff blade, despite it's tapering, thin profile. Much less delicate than a classic Japanese knife, it's still very precise and agile in use and I have no fear of accidentally breaking it. Though not quite European nor Japanese in weight and balance, it has it's own style which I've found very effective and satifying.2. A pulling/rolling slicing stroke works best due to its curved blade when cutting meats or vegetables and once sharpened, cut through meats like butter.

Very sharp knife and quality is excellent

I own a few Gyuto knifes and due to the number of cooks in my home kitchen I found myself in need of another. After much research I decided on this knife based on price & quality. The only problem I’ve expressed so far is that it is rarely available for my use because others in my family have become very fond of it.

This is a great knife and very sharp. However when I received the knife I was punctured from the tip that was sticking out of the packaging so when I opened it the safety guard was just laying inside the case and the reason for that was because the cut in the plastic tip was cut on the long side and not at the end where it should have been to be able to slip it onto the knife tip. So please use caution when receiving the package just in case you have the same slip up.

Quality is fine but the handle is too heavy .
