does this work with Eero pro wifi 6 with zigbee?

I can confirm, I use it with sonoff ZigBee dongle on HomeAssistant with Zigbee2mqtt works like magic. I previously had noname ZigBee dongle, worked too.

Does this work with ring 2gen

No, it will not work with Ring. An Aqara Hub is required.

Need a replacement sticky pad for these. Any ideas please?

Use 3M/Scotch Restickable Pads as these can be easily removed without residue, washed and reused many times.
