What length are the segments being sold in the set

The 1/4" set comes with to segments I believe they are are about 5 3/4" in length each. I will measure ones still in package for an accurate measurement and will post again.

Can I use the included adaptors to connect to pvc? It doesn't have to be watertight. I'm making a youth wrestling takedown dummy and these are joints.

Yes. There are 2 male NPT (national pipe thread) connectors in this kit that will screw into a female threaded pvc fitting no problem

Are these food grade? If I wanted to use this as a faucet for potable water would that work?

What are the NPT sizes for the 1/2" set?

The ones I got from Amazon had 1/2” NTP threads. Although if you look at Loc-Line’s web site they also make the 1/2” adapter with 3/8” NTP threads.
