conical or flat -- makes NO difference. There are $3,000 grinders with flat burrs. BTW this is NOT for espresso. try it and fail.

Is it OK to put a small amount of coffee in the hopper (e.g., enough for one cup) and let the timer turn off after the hopper has been depleted?

Yes. It's not a problem. There is a safety switch in the foot of the unit that requires the cup to be in place for the motor to run. If the machine is still running when the coffee is gone from the hopper, simply remove the collection cup. This will stop the motor from running unnecessarily.

Can it be used as a grain mill?

This thing has been a workhorse! I use it for grinding whole oats with hulls (sometimes sunflower seeds too) to make up horse feed 2x a day. I grind 4-5 cups each feeding with the setting on coarse, and after almost 2 1/2 years it is just now getting a little dull and heating up to where it quits on me toward the end of the 5th cup. I am getting ready to purchase again even though the first one is still working... just not quite as well. It has never let me down! I have been very happy, considering I have not been using it for its intended use.

will it grind nuts into flour?

No this is a coffee grinder and should not be used to grind anything else. It will dull the Burr and ultimately ruin the machine.
