Will these work with a Shopsmith band saw with a 2.5" blade opening?

I don't know if they fit your saw but I do know I sent them back because the dimensions were not as advertised.

Are they plastic or metal?

Metal and the paint made it a very tight fit for my Ridgid bandsaw. I’m going to use them as a pattern too.
