**Q: So this can do 20 degree edges AND 15 degree edges, or does it only change 20 degree to 15 degree?**
A: Does both 20 and 15 degree edges.  If you zoom the picture you'll note the labels - Asia, Euro/Amer and Polishing.  So you start with either Asia or Euro then finish with Polishing.  Works good.

**Q: To sharpen, do I pull knives through in one direction or do I do back and forth motion to sharpen?**
A: The other posts are incorrect. **Q: What is the warranty on manual sharpeners ?**
A: if your buying through amazon and using it correctly itz probably pretty good,the chefs choice stuff is made well

**Q: I would think “three stages” meant you use each stage progressively. This sounds more like a choice for three distinct type of blades. Is that right?**
A: Good Morning,
This is what we have found in using this sharpener. The first and second slide sharpens and "hones" the knife and the third slide we use for our serrated bread knife. We have small, straight edge steak knives that we love, and this sharpens them beautifully. We have only sharpened the bread knife a couple of times, but it seemed to do the trick ok. Does not seem like it needs it very often. Hope this helps.....
