It's on the side of the lid in 2 lines. Mine reads: top 20 020 bottom 11:25. This looks like November 2020 if you assume the year is printed as three digits (020 not 20). This seems absurdly soon. Note that it is a "Best By" date. Mustard basically does not spoil. Vinegar is a preservative and mustard seed is anti-microbial so there's little chance of spoilage. Eventually mustard will lose its taste and the vinegar will separate from the mustard seed powder. As I tend to have 3 or 4 varieties on hand, they sit around a while and I've never had a problem. "Best By" is a taste indicator. The company thinks the taste will be best by that date. Lowensenf tends to get a bit hotter over time and many people like this. But you don't worry about spoilage. **Q: Is this mustard fermented?** A: No **Q: is the jar supposed to pop when opening?** A: Yes. It means the vacuum seal, which protects the freshness and wholeness of the product, was intact.
