I thawed one for dinner and cooked it in a hot skillet with olive oil, using my seasoning. 5 min on one side, 3 on the other and got a perfect crust. Let it rest for a minute, then we split it after a quick discussion on who got which half. It was just perfect. Tender, buttery and full of flavor, just like a high quality NY Strip. We had it with roasted vegetables and a big pot of herbed, buttered mashed potatoes. Honestly, I shouldn’t have second-guessed this purchase.
