The green curry paste (and most of our other pastes), will keep for about a month in the fridge after opening. This can vary depending on the temperature of your fridge, how full the fridge is etc, but 1 month is a good estimate. They probably mentioned these things are NOT in this product not only because they are allergens for some people, but also because all of these things are common ingredients in typical Thai foods.
