Will freezing it help it longer?** A: I wouldn't freeze it because I wouldn't have it around that long. **Q: After opening the package, can we keep it in the room temperature?** A: Mine has been open but I put it into a large Ziploc. It's fine at room temp as long as it's dry and not exposed to moisture. **Q: Would this be considered white or yellow koiji?** A: Miyako Kouji is produced using both white and yellow kouji. **Q: How do I make more koji using this?** A: Koji original form is rice (shown in the bag) if you want to make more then grind into powder to achieve the flour base if your wanting to use it for drenching foods before cooking or to age your beef over a day or two.
