## Description

Low acyl gellan gum is prized by modernist/molecular gastronomy chefs as a gelling agent that forms firm yet tender gels, fluid gels or gel coatings with excellent flavor release. It must be heated above 158?F in a solution with calcium or sodium, and will then gel as it cools. Low acyl gellan can be used to make gels in concentrations as low as 0.5% of the total weight, so 2oz will go a long way. The higher the concentration of gellan, the firmer the gel.
