This super sharp Zhen AUS 10 Paring Knife is produced by Aichi Steel in Japan. The AUS 10 allows for improved wear resistance, blade toughness and makes it easier to sharpen than other stainless steel knives. The 3-layer blade has a cutting core of AUS 10 with a soft outer wrap, making it easy to maintain. The knife has a full tang design with an oval micarta handle to prevent slipping and allows for a comfortable grip. Comes with its own handcrafted gift box or storage box.The micarta handle has an oval design that makes it great for both left and right handed use. The AUS-10 stainless steel blade is heat treated to a hardness of HRC 55-57 and has a traditional western double-bevel edge.
