To combat this limitation when I put in the new cabinets I intentionally mounted one upside down after removing the toe kick and suspended it between the adjacent cabinets. Now the platform pops up and stops just below the counter surface. It makes lifting the heavy mixer pretty easy but one thing I don't like is it can be a little difficult to get both handles locked in when you raise it. Lowering the appliance is fantastic.
