Many Thanks, Team JML **Q: When frying chicken, I get black marks that won’t come off when washing… what am I doing wrong?!** A: Thank you for your message We have some simple tips that may help you get the most out of your pan in the future: First, we would recommend putting a tablespoon of bicarbonate of soda or some washing up liquid into the pan with warm water and gently heat this over the hob for 8 – 10 minutes to break down any stains/discolouration. More stubborn marks can be removed by making a paste of bicarbonate of soda with a little white vinegar and applying with a soft cloth. I would then suggest repeating the seasoning process on your pan, as per the instructions, on a frequent basis as this enhances the performance: 1. Rubbing pure vegetable oil into the surface of the pan with a kitchen towel. 2. Warm on a hob on a medium heat until it starts to sizzle. 3. Leave to cool, then wash and wipe clean. 4. Repeat periodically to improve the surface performance and longevity. One of the main features of Ceracraft Pans is that oil is not essential for cooking and if this is one of the reasons you purchased the pan then I would also advise to avoid pre heating the pan prior to cooking (as you would with a regular pan) to obtain best results. As Ceracraft are a unique style pan which conducts heat a lot faster than a regular pan there is no need to heat when empty as this will cause ingredients to cling to the pan. You should add ingredients into the pan then turn the hob on to a low heat, and then gradually increase to a medium if necessary as you add further items. If you do still prefer to use oil occasionally then I would recommend pre heating the pan for a couple of minutes on a minimal heat before adding your ingredients. The heat at which the pan is used will make a big difference to cooking and I would always suggest starting on a low heat until you get used to how quick the Ceracraft Pan conducts heat compared with other pans as it is quite different. This will prevent any issues with ingredients going into the pan and the outer skin of the ingredient burning creating uneven cooking. I am confident by following the above the performance of the pan should improve. Please note that if you have not currently carried out the seasoning process, it may need to be repeated up to 2 or 3 times to see improvements.
