The manufacturer suggests that the diluted and sweetened "finished" product should be refrigerated, but makes no mention of the concentrate itself. I wasn't surprised that a refrigeration directive wasn't suggested for the concentrated product itself, and it seems that the user would be free to take the large unmixed container to the BBQ site without fear of spoilage - a def plus. Concentrates are often inherently bactericidal.This preparation has a bright, piquant taste which is delicious but hard to place - difficult to say that it tastes like this or that. This is another plus, in that Blue Plate seems to be suitable for many uses. I used it today on pan fried catfish, and this turned out to be an excellent culinary choice - an adaptable recipe.Lastly, a concentrated formula allows for inherent flexibility. After roasting a great loin of pork, I used its drippings to dilute the concentrate instead of water which the directions called for, and this turned out to be an inspired choice. You can add more or less sugar to suit your culinary needs as well - not an option easily found any other way. You can also go with more or less added vinegar, say, as preferred.
