Ceramic is the sharpest blade I’ve tried they cut softer vegetables and fruits for me better than my Shun or Wustof. The couple of downfalls are that the handlers are plastic which is not as aesthetically pleasing and looks cheap sitting in the knife rack. They will eventually break since they are more delicate material and you can’t cut hard foods with them.
