The trick with using professional quality pans is that you need to think like a professional. I've read quite a few reviews that say you can only use these pans on a low heat and that everything sticks, that is only true if you're using the same techniques as you would for a nonstick pan. When the tool changes the technique should change! Professionals aren't afraid of high heat, they aren't afraid of oils, and they understand how to use ingredients that pull the flavors from the bottom of the pan. If you're having trouble with these pans, just watch a good cooking show and try something different from what you're used to in the old, toxic, nonstick coated pans. These pans can take heat! They can take a good deglazing! They can go from stovetop to oven! They can handle any utensils you throw at them! They are gorgeous restaurant quality pans! And cleaning couldn't be easier! Love the features on the lids to drain water/liquid. I bought this set in January 2024. It is now February 2026. 2 years of regular use and these pots still look brand new! No discoloration inside or on bottoms. They clean easy. No stick (as long as you know how to cook with stainless steel). We got rid of all plastic and Teflon cook ware so only stainless utensils have been used in these pots and I would say they are very durable. There are light “scratches” (as would be expected) but they are not deep and no chipping anywhere. If you are looking for a set, this is it! Keep in mind the whole set is not pictured and this set has been used for 2 years. Still looking shiny and new!

**Q: where are they made**
A: Some sets of cookware and many other items - when it shows made in the USA the companies are in reality "fudging" with facts.   it is often meaning that the finished product is put together in the USA with parts that are manufactured in China.  If you read the Product Information and look at Country of Origin it does show China.  I did research and found this "The majority of Calphalon's aluminum cookware (depending on the line) is manufactured to varying degrees (from 30 to 100 percent) in Toledo, Ohio. The stainless steel and cast iron Calphalon products are only produced in China. Additionally, utensils, bakeware and kitchen gadgets are also made overseas."

**Q: Lids for caphalon pots**
A: don't touch them when they are hot ! handles do not stay cool

**Q: Has anyone actually used these on an induction cooktop?  Do they work well on induction?**
A: Yes.  That is the main reason I own them.  Now, I just love my stainless. Plus: the outside stays much cleaner on an induction cooktop than on a flame.

These are the most amazing pans! They are easy to cook with and incredibly easy to clean! These are truly professional quality pans! The trick with using professional quality pans is that you need to think like a professional. I've read quite a few reviews that say you can only use these pans on a low heat and that everything sticks, that is only true if you're using the same techniques as you would for a nonstick pan. When the tool changes the technique should change! Professionals aren't afraid of high heat, they aren't afraid of oils, and they understand how to use ingredients that pull the flavors from the bottom of the pan. HIGHLY RECOMMEND! prefect gift for a mother, wife, child who is moving out, house warming gift, wedding gift, etc! This set is amazing. Love the features on the lids to drain water/liquid. I love these pans and am so glad all the former reviews panned (haha) out to be true. I’ve used these extensively now for over a year and can confirm they are a GREAT set that I expect will last many many years to come! A few pieces of advice to get the most out of this (or any) set of quality stainless steel pans: - They are dishwasher safe but I do not ever put them in the dishwasher. They clean so easily and fast that the potential harm far outweighs cleaning them by hand. If needed, soak for an hour or two with some hot water and soap. Try not to let them soak for extended periods of time. With that in mind I did in fact get lazy once and leave a pan to soak for a week because, depression and all - and they didn’t get harmed. So that is a huge deal! - I use a regular sponge to clean them. I do this to avoid scratching them. The soak should be all you need to get stuff stuck off them. - When I finish drying them to avoid water spots I use a towel to dry them off 95% of the way and let them air dry the final bit before putting them into my cabinet. - For spotting over time, barkeepers friend and or the pink stuff will take it right off. You can also make a homemade cleaner with some vinegar, lemon juice, and baking soda - but the first 2 I mentioned are cheap and work so well I don’t bother. - if you struggle with these especially if you used non-stick in the past - be patient. Start with less heat than you’d use with a non-stick. Use more oil than you’d use in a non-stick. I personally prefer my nonstick for say, eggs. But a steak or fish or chicken or vegetables where I want some charring and browning? This is the way to go. (Or a cast iron if that’s more your thing.). - I bought a cheap steaming basket on Amazon that fits into the largest pot and it works great to steam veggies etc. the largest pot is big enough for me to make 20 large servings of cheese for Mac n cheese on Thanksgiving - It’s quite large. Overall for the price point, the variety of sizes and uses these pans provide and the overall longevity I’ll get from this purchase I fully recommend them. If I had one single thing to critique it’s that the lids do not fit all of the pans. The largest frying pan is larger than any of the lids which, is a shame. Sometimes I have things I need a lid for which is frustrating.. but other than that it’s damn near perfect!
