(100% barley) Barley malt powder is sometimes called flour as it is made from grain that is fermented, then dried and ground. The process turns the grain's starch into sugar.

Review: This is NON-Diastatic malt. (Not the "dough conditioner") - If they only labeled it correctly they would sell far more of this product. I've purchased from Barry Farm for years, and had to laugh at all the arguments and questions online about what this really is. It is MALT. Dried, powdered malt flour, for flavoring, light sweetening, and to aid browning. It is Not "Diastatic" malt which still has enzymatic activity, since This is roasted to stop that activity. Think of it as "malted milk powder" but Without the dry milk and (important) without all the added sugar. It has a natural sweetness all its own, and this shipment has a more yellow color than many I've used. ADDICTING USES: Add a teaspoon to your buttermilk pancake recipe to make people wonder (I recreated - after trying for years - some I fell in love with in San Francisco years ago). It also is important for Banana Muffins (and bread) - especially if adding a bit of whole wheat flour to the mix. Also helps Blueberry muffins and loafs. But omit or half the vanilla in those quick-bread based recipes; it's too much if adding malt. And yes, use it for flavoring beverages, cocoa, hot milk, etc. And IMHO, it's a must in Bialy recipes. (For easier blending, add it to the sugar and salt portions of recipes before mixing in.)
Review: Tastes Great! Banana Malts Rock!!! - In my early 20’s I was hooked on Foster’s Freeze banana malts. This doesn’t have any added sugars in it, so as a diabetic type 2 I add stevia to a frozen banana, Califia Coconut Almond milk, and this malt for a smoothie shake! It tastes like I remember it from the restaurant 👍, and without the vanilla ice cream! The package is as depicted. I would recommend that the company use a nicer zip lock and label. No complaints whatsoever though. God’s blessings to all of you! 🙏

**Q: is it sugar free**
A: Hell no.  Maltose is a sugar.  nutritiondata.self.com lists the Glycemic load of Barley Malt Flour at 78 where pure sugar is 100, unmalted Barley Flour is 62, & Whole Wheat Flour is 44.  Read the first paragraph of the Wikipedia article on Malt about how the reason for malting (germinating then drying) the grain is because this releases enzymes that convert some of the starches in the grain into sugars.  If you're asking, "Does this have refined sugar mixed in?"  Well, no, it doesn't.  However, this stuff itself is sweet.  Grain has been malted to make it sweet from before the process for refining sugar first existed.

**Q: Made from grain that is fermented, then dried and ground. Should it be germinated instead of fermented?**
A: No, the first guy is right - this has not been fermented, or it would contain alcohol - which would evaporate when drying. Malted grain has been sprouted and has the process halted by drying.  the little shoots are usually knocked loose, and the malted grain has active enzymes to convert starch to sugar, The ad is incorrect.

**Q: What is the difference between "Malted Milk Powder" and "Barley Malt Powder?"  (I'll use the malt for flavoring milk and ice cream.)**
A: Barley malt powder is an enzyme rich additive for baking flour.  It is actually powdered dry barley sprouts.  It is not a flavoring agent and is not used to add any malt flavor to milk or ice cream.

**Q: can you please list whether this is diastatic or non-diastatic?**
A: I saw the same package on ebay. It seems that the diastatic one has "Diastatic Molt Powder" label on it and other just has "Barley Molt Powder", so I assume this is non-diastatic.

### ⭐⭐⭐⭐ Good for Malt Shakes!

We were looking for an Organic Malt Powder to make homemade Malt Shakes. This was as close as I could find. It makes great Malt Shakes-delicious. I would give it 5 stars if I knew it was at least non-GMO, if not Organic. I'll keep looking, but in the meantime, it is "all natural" and contains no added sugar.
