I add one TBSP water to the instructions with the mix. Scones in London are good. But these, fresh from the oven, still warm, are incredibly light and delicious. It is close to impossible to find cream tea with scones which come to you fresh from the oven in GB. These are a delight to serve to guests. My grocery stocks clotted cream. There is a recipe in Joy of Cooking if you cannot buy clotted cream.
