There was/is a school of thought that harmful toxins were released at high temps. Debunked. I add grapeseed oil to xv olive oil to raise smoke point if I am pan frying. EV Olive Oil gets a bitter aroma and taste when close to smoke point. I have been a Monini EVOO Originale for over 25 years, it is the only EVOO I purchase. Amazon cost plus shipping is most economical source i have found. **Q: How do you open the can?** A: o open can pull the 2 outer sides of the white ring up and then Pull gently to pop up the spout. Once spout is up then twist off cap. **Q: Has big oil container (101.4 fl oz) BPA free lining?** A: There are no indicators to show if it's BPA free or not. Not even the recycle symbol provides any markers or numbers. I also don't know enough about BPA to tell you if it'd be present in the metal, but the amount of plastic on this product is minimal. It's just the top where the screw cap is. 1.5 inch diameter at most. For anybody else wondering, that means no one can answer BPS or BPF questions either. **Q: how long can monini oil last after the expiration date** A: I store mine in a dark cool space and frankly go through it so I have not had to worry about the expiration date. You might try contacting the product maker. Typically oil will smell “off” when it’s past it’s prime.
