Where are the instructions?** A: Mine came with instructions in a small pamphlet attached to the handle. Basically it says to clean the pan really well to make sure you remove any protective wax, add some oil (something neutral with a high smoke point like grapeseed) to the inside of the pan and spread it around. I put mine onto the stove top over medium high heat and left it there until it started to smoke. Remove from the heat and very carefully wipe away any excess oil. If you repeat this several times you'll get a good seasoning. It takes time, but it's worth it. My first omelette came out perfect. **Q: What is the diameter of the flat cooking surface?** A: 6.5 in **Q: Is it ok to cook steak with this?** A: Of course it is. This is the most versatile pan in my collection. It get's the most use of any I have. A few notes on this: 1) heat the pan before adding any oil, 2) It will heat faster than cast iron, 3) add the steak to a hot, lightly oiled pan and do not move it. Let it caramelize and cook on one side before moving it around or turning it.
