    Solid overview of cell-based meat development

I have spent the past 20-odd years in agricultural finance and one of the topics that we are considering is what will the definition of a “farm” be in future. This book provides a good overview of the main themes in cell-based meat developments including a brief history of the concept. It explains the basic science of obtaining and growing the cells, the equipment needed and the challenges in identifying the optimal growing media. It also delves into the developing regulatory framework, the response from big agriculture and challenges for social acceptance of the output. It is clear from the content that this is very much a technology and market-based approach. Some companies aim to take advantage of more environmentally conscious consumers, while others are more focused on food security given the potential impact of climate change.Focusing on one entrepreneur in the form of Josh Tetrick from JUST provided a personal perspective, but I didn’t find him a very compelling character. It feels as if the author wanted to follow a similar approach to Michael Lewis in the structure of the book, but he didn’t quite pull it off.Based on the content, I am more confident to engage on the subject having a better (although broad) understanding of the themes in the sector. If you need a detailed view of any of these aspects, this is not the book for you. If you are however looking for an overview that will allow you to interpret and understand other articles and material on cell-based meat, this is a good start.

This is the first time I have felt compelled to write a review of a book purchased through Amazon. The book is nothing more than a 232 page paean to this secretive, self-glorifying industry, centered around the author's crush on Josh Tetrick. The author only glancingly addresses the problem that not a single one of the subject companies is willing to disclose the contents of the chemical soup required to produce this "meat." (Trust Us! It's Safe!) More problematically, the entire premise of the story assumes, without evidence, that this chemical, industrial production of meat will be environmentally 'better' than conventional mechanisms. In fact, in one of my favorite anecdotes, told at pages 45-46, a researcher on the topic found, in a 2018 study, that energy consumption from the production of "cell-culturing meat" would be four times higher than she found in her prior, 2011 study. The researcher deliberately withheld publication of the 2018 numbers because she didn't want the public to 'misunderstand' the 'nuances' of her findings and harm the fledgling industry (!?!?!). The author acknowledges (as he must) that the industry's claims as "an environmental godsend" should be "taken with a grain of salt," yet the entire remainder of the book rests its support of chemical meat on curbing global warming. The author's lack of objectivity, and his blind parroting of the self-interested claims of this industry and its charismatics, is the same mindset that gave rise to Silicon Valley luminaries such as Juul and Theranos.

Chase Purdy does an excellent job of shining a light on a nascent industry that might have otherwise flown under the radar of average American consumers for several more years. He brings forth a collection of hard-charging personalities that are on the verge of disrupting the global food system (arguably for the better) when our civilization may need it the most. The science behind cell-based meat production would normally take a Ph.D. to understand, but Purdy breaks it down into plain English while weaving through the visionary egos that are leading the pack. If you are like me and love meat, but increasingly feel like that personal choice is questionable for the planet, Billion Dollar Burger is a must-read for a glimpse into a (possible) sustainable flexitarian future.
