With some practice, knives are close to razor sharp. Will shave hair off my arm. For best results: - Get the horizontal and vertical angles right so the wheel runs smoothly. The wheels shouldn't chatter. - Use only enough pressure to keep the blade in contact with the wheel...the weight alone is sufficient in many cases. But, the sharpener is electric, so it just takes a little patience, not hard work. The #1 slots are mainly for removing nicks, anyway. The 800 grit slots (#2) take care of the day-to-day sharpening. 3) For Santoku knives that are sharpened to 15 degrees, use a different sharpener. The Shenzhen fine section is set to 20. I keep a manual “Asian” sharpener around for maintaining a stainless steel Santoku. (The Farberware ceramic Santoku appears to be ground at 20 degrees, so it honed up nicely in the Shenzhen.) Buy one, you'll love it!

Pros: stones are removable via a simple twist and the whole barrel comes out. Also, the barrel can be replaced with a new one when worn out. Design easily fits on the counter, we hate clutter. After sharpening 3 knives they were like the day we first purchased them. One of the blades I use the most (the Santoku knife) had a noticeable nick on it. My bad, I slid vegetables to a bowl using the blade and not the backside of the knife. After sharpening the Santoku knife, the nick was removed and the blade was once again sharp. The unit is quiet and has a solid feel to it while sharpening. The slots have a good fit to the blades, preventing them from drifting around and permits sharpening right up to the handle. All in all, very satisfied with this purchase. Hint: light pressure while sharpening the blades is recommended, I was a little heavy handed on the first attempt but soon got the "feel" for the right amount of pressure. I would recommend this product to a friend. Cons: None.

This is the best knife sharpener I've ever used. Super sharp edge on both steel and ceramic! With some practice, knives are close to razor sharp. Will shave hair off my arm. For best results: - Get the horizontal and vertical angles right so the wheel runs smoothly. We have 9 Kyocera Knives, after a few years I noticed they were becoming dull. These knives come with a lifetime sharpening service, a handling fee is $5 per knife but you pay to ship it to them and there is the wait time factor. Also, the blades when sent in MUST have protective sleeves to protect the blades during shipment. After weighing all alternatives I purchased this sharpening system. ### ⭐⭐⭐⭐ It sharpened my ceramic and stainless knives

First, I’m a woodworker. That requires extremely sharp tools like hand planes and chisels. I have plenty of gear from bench grinders to diamond stones and polishing compound plus more and have pretty good technique using it. However, I’ve never achieved decent results on stainless or ceramic knives. I had good results on the first stainless knife I tried on this sharpener. When I tried many passes of the first ceramic knife through this device, it didn’t make a difference. Grumble, grumble. But I kept trying because the seller told complainers their knives were dull and needed more work. So, I continued to grind away. After something like 15 passes per side, the knife started to feel sharp. A few more passes on both the course and fine stones and the job was done. Based on the results, this device ended up doing a good job. I didn’t give it five stars because I had to use a different technique on each side of the stones. One side needed light pressure. The other side needed firm pressure or the knife didn’t engage the stone then the knife would pop out. Maybe it was me. Regardless, after a little experimentation, I was able to get the job done. I still have a number of knives to sharpen. If my opinion changes one way or the other, I’ll add to my review.
